Description

Naturally, tougher leaves like Swiss chard take longer to cook. Do not remove the pan from the heat until they are soft enough.

Ingredients

  • Red Onion - 1 head
  • Spinach - 7.1 oz
  • Lemon - ½ piece
  • Grated Parmesan cheese - 2.5 oz
  • Ground Black Pepper - to taste
  • Ciabatta - 4 pieces
  • Cherry Tomatoes - 4 pieces
  • Extra virgin olive oil - to taste

Step by Step guide

Step 1

Place a pan over medium heat, add olive oil. Add the chopped onion and cook until it starts to caramelize.

Step 2

Add the greens and let them wilt, stirring occasionally. Squeeze lemon juice on top, remove the pan from the heat, and add most of the grated cheese and a generous pinch of pepper.

Step 3

Preheat a grill pan and place the slices of bread and cherry tomatoes in it. Grill, turning occasionally, until golden brown.

Step 4

Squeeze the flesh of the tomatoes onto the toasts—one tomato per slice. Top with the greens and sprinkle with the remaining cheese. Drizzle with extra virgin olive oil and serve immediately.
