- Vanilla Ice Cream - 28.2 oz
- Powdered Sugar - 7.1 oz
- Farm fresh eggs - 6 pieces
- Butter - 4.2 oz
- Sugar - 3.5 oz
- Wheat Flour - 3.5 oz
- Lemon - 1 piece
- Corn Starch - 0.9 oz
- Baking Powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Red Wine Vinegar - ½ teaspoon
- Salt - a pinch
Step by Step guide
Step 1
Separate the egg whites from the yolks. Chill the egg whites.
Step 2
Grate the lemon zest finely.
Step 3
Cream 100 g of softened butter with sugar.
Step 4
Add the yolks, both types of flour, baking powder, lemon zest, half a teaspoon of vanilla extract, and mix until smooth.
Step 5
Line a springform pan with parchment paper, grease the paper with butter, and spread the batter in a thin layer. Bake the cake for 12–15 minutes. Let it cool.
Step 6
Whip the chilled egg whites with a pinch of salt until stiff peaks form.
Step 7
While continuing to whip, add the vinegar, then gradually incorporate the powdered sugar. Add half a teaspoon of vanilla extract.
Step 8
Place scoops of ice cream in the center of the cooled cake.
Step 9
Top with the whipped egg whites, ensuring all the ice cream is covered.
Step 10
Bake in a preheated oven for 5 minutes.
