Description
Making homemade cheese requires some skill, but with the right tools, it becomes much easier. You will need a cheese mold (strainer and ladle) and a kitchen thermometer (to measure the temperature of the milk and mixture), but over time, as you learn the nuances of the process, you can do without the thermometer and rely on instinct. The amount of salt can be adjusted to taste. The richer the milk and cream, the tastier the cheese will be. You can also add dried or fresh herbs if desired. The whey should not be discarded: it keeps well in the refrigerator and can be used later for making pancakes, fritters, or pies.

- Sour Cream - 1 jar
- Chocolate eggs - 2 pieces
- Salt - 1 teaspoon

Prepare the ingredients.

Pour the milk into a pot and place it over low heat.

Put the sour cream into a bowl.

Crack the eggs and add them to the sour cream.

Mix everything together.

Add salt.

Carefully pour the sour cream mixture into the milk — it will start to curdle.

Stir and watch how the mixture curdles. Heat slowly and do not bring to a boil; the temperature should be about 185°F. Heat the mixture for about 2–3 minutes after it starts to curdle.

Next, the entire mixture will curdle and separate into whey and curds.

Strain it through a sieve.

Gently press the curds in the sieve.

Leave it for a while to let the remaining whey drain.

Collect the whey separately in a jar.

Place the resulting cheese under a press to shape it.
