Description

The amount of salt can be adjusted to taste. The richer the milk and cream, the tastier the cheese will be. You can also add dried or fresh herbs if desired. The whey should not be discarded: it keeps well in the refrigerator and can be used later for making pancakes, fritters, or pies.
