Homemade Herb Chicken Sausage
Ingredients
- Milk - 10 fl oz
- Chicken fillet - 24.7 oz
- Egg white - 3 pieces
- Salt - 0.1 oz
- Ground Black Pepper - 0.1 oz
- Herbes de Provence - 0.2 oz
Step by Step guide
Step 1
Cut the raw fillet into pieces. Grind the chilled chicken (or turkey) fillet in a blender until creamy, add the egg whites, pepper, and salt to taste. Optionally, you can add nutmeg.
Step 2
Pour cold cream into the mixture and mix until smooth.
Step 3
On a rectangular piece of plastic wrap, place 1/3 of the mixture, roll it into a sausage shape, and tie the ends with string. Repeat this process two more times to make 3 sausages.
Step 4
Pour water into a pot and bring it to a boil, then reduce the heat to the minimum. The water should not boil. Place the sausages in the water and press them down with a small plate so they do not float. Cook for 60 minutes.
Step 5
Remove the sausages and let them cool.
Step 6
Remove the plastic wrap.
Step 7
On a table, lay out parchment paper, sprinkle it with spices and herbs (Italian herbs work best). Place a sausage on the herbs and wrap it up. Repeat this with each sausage. Refrigerate for 8 hours, or overnight if possible.
Step 8
Before serving, remove the paper and slice.
