The creaminess ensures the final product's tenderness; it's important to take the whipped mixture out during the process and mix it well to avoid any lumps or ice crystals in the finished ice cream.
Ingredients
- 10% cream - 17 fl oz
- Milk - 8 fl oz
- Vanilla salt - 0.4 oz
- Sugar - 4.2 oz
- Whole egg - 5 pieces
- Salt - a pinch
Step by Step guide
Step 1
Whisk the egg yolks with sugar and salt until they form a pale, fluffy mixture.
Step 2
Pour the milk and cream into a heavy-bottomed saucepan, add the vanilla sugar, place over heat, and bring to a boil. Remove from heat.
Step 3
Gradually pour the hot cream mixture into the egg mixture while keeping the mixer running.
Step 4
Pour the mixture into a clean pot, place it over low heat, and bring it to 176°F, stirring constantly with a wooden spoon.
Step 5
Strain the mixture through a fine sieve into a suitable bowl.
Step 6
Cover with plastic wrap directly on the surface and let it cool. To speed up the cooling process, you can place it over ice. Once cooled, transfer the mixture to the freezer for 2 hours.
Step 7
After 2 hours, take the ice cream out of the freezer, stir it, and put it back for at least another hour. After that, it will be ready to eat, or you can store it in an airtight container in the freezer for another week.
