Ingredients
- Whole egg - 2 pieces
- Chicken Egg - 4 pieces
- Mulled Wine - 10 fl oz
- Butter - 1 teaspoon
- Powdered Sugar - 6.2 oz
- Vodka - 4 fl oz
- Cranberry - 2.6 oz
- Cream - 9 fl oz
Step by Step guide
Step 1
Place 6 egg yolks in a bowl, add 50 grams of powdered sugar, and beat until pale. Add the dessert wine. Place the bowl over a water bath and cook for 8 to 10 minutes, stirring, until you get a custard. Cover with a sheet of parchment paper greased with butter and cool for 1 hour.
Step 2
Bring the vodka with cranberries to a boil and simmer for 3 to 4 minutes. Cool.
Step 3
Whip the cream with 50 grams of powdered sugar. Cover and chill.
Step 4
Pour the remaining powdered sugar with water, bring to a boil, and cook the syrup for 5 minutes.
Step 5
Whip the egg whites to a stiff peak. Gradually pour in the syrup while continuing to whip.
Step 6
Add the custard to the whipped cream. Add the cranberry-vodka mixture.
Step 7
Place in the freezer for 3 hours.
