The homemade baguettes turned out excellent.
Ingredients
- Wheat Flour - 15.9 oz
- Dry Malted Milk Powder - 1.1 oz
- Milk - 7 fl oz
- Kefir - 5 fl oz
- Dry yeast - 0.3 oz
- Pork fat - 0.6 oz
- Sugar - 0.5 oz
- Salt - 0.3 oz
- Whole egg - 1 piece
Step by Step guide
Step 1
I mixed the dough in a mixer — it turned out not too thick, and left it in a warm place at 86°F for 1 hour.
Step 2
After an hour, I placed the dough on a floured table, divided it into three parts of 300 grams each. I made balls and covered them, leaving them for 15 minutes.
Step 3
After 15 minutes, I rolled out the dough into a flat shape, expelled the air, and rolled them into logs.
Step 4
I left them for 60 minutes under plastic wrap. 10–15 minutes before the end of the proofing, I preheated the oven (I did not use a thermometer — I heated it to maximum).
Step 5
I made different slashes on the baguettes.
Step 6
I placed them in the oven until golden brown. I baked the first 15 minutes with steam.
