Ingredients
- Serviceberries - 7.1 oz
- Cottage cheese - 11.3 oz
- Wheat Flour - 7.1 oz
- Butter - 5.3 oz
- Farm fresh eggs - 2 pieces
- Sugar - 3.5 oz
- Vanilla salt - 0.4 oz
- Nuts - 3.5 oz
- Meyer Lemon Juice - 1 tablespoon
- Activated Baking Soda - 1 teaspoon
Step by Step guide
Step 1
Prepare the dough. Mix the flour with the butter, add the baking soda and lemon juice. Set aside 1/4 of the dough in the freezer, and roll out the remaining dough to place in a baking dish lined with parchment paper. Prick the dough with a fork.
Step 2
Prepare the cottage cheese cream. Whip the sugar with the eggs until creamy, then add the cottage cheese and whip again. It's best to use cottage cheese with 5–9% fat content, preferably creamy.
Step 3
Spread the filling over the dough. Distribute the berries on top. I used frozen berries, but if using fresh, wash them and dry thoroughly.
Step 4
Chop the nuts (I used hazelnuts) into coarse crumbs. If you prefer a stronger flavor, it's better to lightly toast the nuts beforehand.
Step 5
Take the dough out of the freezer and mix it with the nuts. Sprinkle the resulting mixture over the pie, cover the dish with foil, and place it in an oven preheated to 356°F for forty minutes, then remove the foil and bake for another ten minutes.
