Homemade Poppy Seed Buns

Ingredients

  • Sugar - 10.6 oz
  • Milk - 17 fl oz
  • Wheat Flour - 22.6 oz
  • Dry yeast - 0.7 oz
  • Chocolate eggs - 3 pieces
  • Butter - 3.5 oz
  • Safflower Oil - 3 tablespoons
  • Salt - ½ teaspoon
  • Poppy seed paste - 7.1 oz
  • Vanilla salt - to taste

Step by Step guide

Step 1

In warm milk, add salt, 2 tablespoons of sugar, and yeast. Stir, then add about 6 tablespoons of flour and mix. The consistency should resemble that of kefir. Now cover with a towel and let it rest for 20–30 minutes.

Step 2

While the future dough is rising, crack 2 eggs into a bowl and whisk until thick foam forms. Add a pinch of salt and sugar. Gradually add sugar, about 180 grams will be needed. Add 2 tablespoons at a time and continue whisking. The sugar should completely dissolve.

Step 3

Now take the soft butter and melt it. Turn the mixer to low and add the butter by the tablespoon so that it gradually incorporates.

Step 4

By this time, the dough should have risen. Pour the egg mixture into it, mixing in one direction. Add about 500 grams of flour and knead, then add another 100 grams of flour. When the dough starts to hold its shape well, sprinkle the table with flour and place the dough on it. Coat it in flour from all sides and knead. Place the dough in a bowl, cover, and set aside for 1–2 hours.

Step 5

Take the poppy seeds, add 250 ml of milk, mix, then add 2–3 tablespoons of sugar and vanilla. Place the bowl on the stove. When steam starts to rise from the milk, reduce the heat to low and let it sit for 15 minutes. You will need a fine sieve; pour the poppy seeds into it and let cool for 10–15 minutes. Use a spoon to squeeze out the excess milk from the poppy seeds, this is very important. Add vanilla and 100 grams of sugar to the poppy seeds and mix. Blend the poppy seeds.

Step 6

Place the dough on the table, knead it, and put it back for 15 minutes. Again, place the dough on the table and cut it into two pieces. Set one piece aside and roll out the other to a thickness of about 0.5 cm. Spread butter on it, leaving 2–3 cm from the edges.

Step 7

Spread half of the poppy seed mixture on the dough and distribute it over the buttered surface. Now roll the dough into a log. Do the same with the second piece of dough. Cut the log into buns about 5 cm each. Place them on a baking sheet, leaving space between them. Brush the buns with egg yolk. Bake at 356°F for 20–25 minutes.
