Homemade puff pastry
Ingredients
- Butter - 11.3 oz
- Wheat Flour - 14.8 oz
- Water - 5 fl oz
- Sugar - 0.6 oz
- Salt - 0.4 oz
Step by Step guide
Step 1
On a clean work surface, pour out the flour and place the diced butter on top. Then, using your fingertips, rub the butter into the flour. Create a well in the center and pour in very cold water.
Step 2
Add the sugar and salt, and use your fingertips to dissolve them in the water. Mix with the flour crumb.
Step 3
The mixture should turn into a lumpy, semi-liquid dough. Scrape all the crumbs from the edges into this dough.
Step 4
Press the pieces of dough with your palm. Gather all the crumbs and push them inside using both hands.
Step 5
Press the resulting mixture, which should not be too uniform, one last time and roll it into a ball.
Step 6
Shape the dough into a brick, wrap it in plastic wrap, and refrigerate for 1 hour.
Step 7
Remove the dough and place it on a lightly floured work surface. Set a rolling pin in the center.
Step 8
Gently press down with the rolling pin to roll out a rectangle about 40 by 25 centimeters.
Step 9
Fold ⅓ of the rectangle inward and cover it with the remaining ⅓.
Step 10
Fold what you have into thirds.
Step 11
Gently press down on the dough with your palm.
Step 12
Roll it out with a rolling pin to form a rectangle measuring 15 by 10 centimeters.
Step 13
Repeat from the beginning: dust the work surface with flour and roll out a rectangle measuring 40 by 25 centimeters.
Step 14
Fold it in thirds again, starting from the bottom of the rectangle (see step 9).
Step 15
Fold the resulting strip three times.
Step 16
If you only need half of the dough, you can shape it into a rectangle measuring 20 by 10 centimeters and cut it in half. You can freeze one half. Before use, refrigerate it for 1 hour.
