Homemade Spiced Oatmeal Cookies

Ingredients

  • Wheat Flour - 8.6 oz
  • Oat flakes - 10.6 oz
  • Baking Powder - ½ teaspoon
  • Salt - ½ teaspoon
  • Cinnamon - ½ teaspoon
  • Nutmeg - ½ teaspoon
  • Raisins - 3.4 oz
  • Butter - 7.9 oz
  • Brown Sugar - 9.5 oz
  • Farm fresh eggs - 2 pieces

Step by Step guide

Step 1

Preheat the oven to 356°F. Line a baking sheet with parchment paper or grease it with butter.

Step 2

Lightly toast the oat flakes in a dry skillet over low heat, stirring frequently. Once a pleasant, slightly nutty aroma fills the kitchen, remove the skillet from heat.

Step 3

In a bowl, use a fork to mix the flour, baking powder, salt, ground cinnamon, nutmeg, and toasted oat flakes.

Step 4

Using a mixer on medium speed, beat the butter and sugar together, adding the eggs one at a time until a smooth creamy mixture forms.

Step 5

Add the flour and oat mixture to the butter mixture, stirring thoroughly, then add the raisins.

Step 6

Drop spoonfuls of dough onto the baking sheet, spaced 4–5 cm apart, as the cookies will spread slightly while baking.

Step 7

Bake each batch of cookies for about 6–9 minutes, until they are slightly golden and almost firm in the center. This will result in soft, slightly chewy cookies. If you leave them in the oven for an additional 3–4 minutes, they will become crispy.

Step 8

Remove the baking sheet from the oven and let the cookies sit on the sheet for 2–3 minutes to firm up. Transfer the cookies to a wire rack to cool completely.
