- Sugar - 17.6 oz
- Water - 4 fl oz
- Citric Acid - 0.1 oz
- Activated Baking Soda - 0.1 oz
- Gelatin - 0.9 oz
Step by Step guide
Step 1
Soak the gelatin in 120 ml of cold water.
Step 2
In a saucepan, combine the sugar and water, stirring, and cook for about 10 minutes over low heat, then add the baking soda and citric acid, mix well, and cook, stirring, for another 7 minutes.
Step 3
Remove from heat, pour into a mixing bowl, and add the soaked gelatin, beating starting at a low speed and gradually increasing to the highest speed. The marshmallow mixture will begin to thicken.
Step 4
Pour into molds and wait for about 2 hours until the marshmallows easily come away from the silicone.
