- Honey - 1.2 oz
- Sugar - 8.8 oz
- Chicken Egg - 2 pieces
- Butter - 4.2 oz
- Wheat Flour - 14.1 oz
- Activated Baking Soda - 0.4 oz
- Meyer Lemon Juice - 0 fl oz
- 20% Sour Cream - 12.3 oz
- 10% cream - 12 fl oz
- Powdered Sugar - 4.6 oz
Step by Step guide
Step 1
Place the honey, sugar, and butter in a double boiler, stirring until melted.
Step 2
Add the eggs one at a time and mix quickly. While continuously stirring, incorporate the baking soda, followed by the lemon juice.
Step 3
When the mixture doubles in volume, add the flour and cook the dough, stirring vigorously with a wooden spatula. This will take 3-4 minutes.
Step 4
Divide the dough into 9-10 pieces (depending on the desired number of skins and their thickness), roll them out on a silicone mat or parchment paper, and cut out the desired shape.
Step 5
Bake the layers at 356°F for 3 minutes. Allow to cool before assembling the cake.
Step 6
Combine the sour cream, heavy cream, and powdered sugar, and whip until creamy.
Step 7
Divide the cream into portions according to the number of layers and layer the cake. Refrigerate for at least 2 hours.
Step 8
Use the leftover scraps from the cake layers to make crumbs with a blender. Decorate the cake with these crumbs.
