Honey Cake with Nuts and Candied Fruits
Ingredients
- Honey - 10.6 oz
- Chocolate eggs - 2 pieces
- Sugar - 3.5 oz
- Vegetable Oil - 3 fl oz
- Wheat Flour - 10.6 oz
- Freshly brewed green tea - 3 fl oz
- Brandy - 4 tablespoons
- Cinnamon - 1 teaspoon
- Dry yeast - 1 teaspoon
- Ground clove - ¼ teaspoon
- Salt - ¼ teaspoon
- Dried ground orange peel - 1.8 oz
- Roasted Peanuts - 1.8 oz
- Chopped almonds - 1.8 oz
Step by Step guide
Step 1
Whisk the eggs with sugar until light and add the honey. It's best to use the darkest and most aromatic honey. If it has hardened, you can warm it in a water bath until it becomes liquid, but do not let it boil! Add the brandy, cinnamon, and cloves. Mix well. Add the vegetable oil and mix again.
Step 2
Brew very strong coffee, strain if necessary, and add it to the other ingredients.
Step 3
Mix the flour with the dry yeast and salt. Combine everything and mix well until you get a batter that is liquid like sour cream.
Step 4
Coat the candied fruits, nuts, and raisins in flour (this prevents them from sinking to the bottom) and add them to the mixture.
Step 5
Preheat the oven to 320°F.
Step 6
Grease a springform pan with vegetable oil and pour the prepared mixture into it. If the pan is not springform, it's better to line the bottom and sides with foil for easier removal of the baked product. Even better, bake in a silicone mold!
Step 7
Place in the oven for 1.5 hours. Check with a toothpick — when the batter no longer sticks, it's ready.
Step 8
Let it cool in the pan, carefully transfer to a plate, and serve.
