Honey Cake with Sour Cream
Ingredients
- Honey - 3 tablespoons
- Sugar - 17.6 oz
- Butter - 1.8 oz
- Farm fresh eggs - 2 pieces
- Milk - 2 tablespoons
- 20% Sour Cream - 21.2 oz
- Vanilla salt - 0.4 oz
- Activated Baking Soda - 1 teaspoon
- Bananas - 2 pieces
- Kiwi - 2 pieces
Step by Step guide
Step 1
Place a bowl over a water bath, add honey, 200 g of sugar, and eggs. Continuously whisk the mixture until all ingredients are fully dissolved.
Step 2
Add the butter (preferably softened) and mix until dissolved.
Step 3
Add milk and baking soda. Keep over the water bath for another 3-5 minutes.
Step 4
Remove the bowl from the water bath. Sift the flour.
Step 5
Gradually add flour to the mixture (add one cup at a time, about 3-5 cups total) and mix first with a whisk, then with a spatula. When the dough becomes difficult to mix with a spatula, start mixing with your hands. The dough should be slightly sticky.
Step 6
Dust the work surface with flour.
Step 7
Roll the dough into a small sausage and divide it into 8 equal parts.
Step 8
Preheat the oven to 150-200°C. Line a baking sheet with parchment paper.
Step 9
While the oven is heating, take the first part of the dough and roll it into a thin pancake on the floured surface. Take any round shape, press it onto the rolled pancake, and cut the dough along the edge.
Step 10
Transfer the finished round pancake to the baking sheet with a spatula, using your hand to help. The leftover scraps can be kept to make a 9th layer. You can also bake the scraps, then grind them in a blender or coffee grinder, and sprinkle the crumbs on top and sides of the finished cake.

Repeat the same steps with all parts of the dough.

For the cream, take a deep bowl, add sour cream, sugar, and vanilla sugar, and whip with a mixer until the sugar is fully dissolved.

Thoroughly coat the finished layers with cream — some cream will be absorbed by the layers, and some will serve as a filling in the cake, ensuring it is not dry. So, don't skimp on the cream!
Step 14
You can alternate layers of bananas and kiwi as you wish.
Step 15
Coat the top layer and sides of the cake with cream as well.
Step 16
Decorate as desired.
