Ingredients
- Sugar - 1.8 oz
- Butter - 1.8 oz
- Activated Baking Soda - ¼ g
- Cinnamon - 1 teaspoon
- Chocolate - 3.5 oz
- Honey - 2.1 oz
- Wheat Flour - 8.8 oz
- Farm fresh eggs - 3 pieces
- Salt - to taste
Step by Step guide
Step 1
Boil a syrup from sugar and honey. Add 3 tablespoons of water to the sugar and cook over low heat, stirring, until the sugar is completely dissolved. After slightly cooling the syrup, add the liquid honey and mix everything. Let it sit for a while to cool.
Step 2
Separate the yolks from the whites. Soften the butter and rub it with the yolks and syrup. Mix everything thoroughly.
Step 3
Combine the flour with cinnamon, salt, and baking soda. Gradually add the flour to the egg-honey mixture and knead a thick dough.
Step 4
Roll the dough into a ball, cover with plastic wrap (I used foil), and let it rest for 1 hour.
Step 5
Roll the dough into a 'sausage', divide it into equal parts. From each part, roll out an even thinner 'sausage', divide it into equal parts of 5–6 cm, and shape these parts into crescent shapes. Place them on a baking sheet lined with parchment paper.
Step 6
Bake in a preheated oven at 338°F until golden brown, about 15–20 minutes. Remove and let cool.
Step 7
Melt the chocolate in a double boiler and stir. Let it cool slightly. You can use any chocolate you like.
Step 8
Dip each edge of the cookie in chocolate. Place the cookies on a rack, lining it with paper or a mat underneath. Be careful to minimize contact between the chocolate and the rack.
Step 9
Place the rack in the refrigerator or another cool place and let the chocolate set.
