Honey Ginger Cookies

Ingredients

  • Butter - 3.5 oz
  • Egg - 1 piece
  • Wheat Flour - 7.1 oz
  • Honey - 3 teaspoons
  • Sugar - 3.9 oz
  • Baking Soda - 1½ teaspoons
  • Ground Ginger - 2 teaspoons
  • Ground Cardamom - 1 teaspoon
  • Cinnamon - 1 teaspoon

Step by Step guide

Step 1

Warm the honey slightly in a water bath until it becomes liquid. Let it cool for a few minutes before adding it to the dough. In a deep bowl, cream the butter with the sugar or beat with a mixer on medium speed. Add the cooled honey and the egg. Mix everything until smooth.

Step 2

In another bowl, sift the flour, add the spices and baking soda, and mix everything very well. This is important, as poorly mixed flour mixture will result in clumps of spices in the cookies.

Step 3

Gradually add the flour mixture to the butter mixture and knead the dough very well. It will be sticky — that’s how it should be. You can add more flour, but no more than a tablespoon. Gather the dough into a ball, wrap it in plastic wrap or place it in a bag, and refrigerate for 1.5–2 hours. The dough needs to rest and chill, making it easier to roll out.

Step 4

After taking the dough out of the refrigerator, knead it a couple of times and roll it out. If you knead it too long with your hands, it will heat up quickly and you will have trouble rolling it out. Put any leftover dough back in the refrigerator. You can roll the dough as thin as you like, but I recommend about 0.5 cm. Do not leave it at room temperature for too long, or it will become too soft.

Step 5

Line a baking sheet with parchment paper or grease it with butter. It’s convenient to transfer the cookie shapes onto the baking sheet using a knife, gently lifting the cookies.

Step 6

Place the cookies a little apart from each other, as they will expand in size while baking. Put them in an oven preheated to 356°F for 7 minutes. I do not recommend overbaking the cookies, or they will be completely dry.

Step 7

Once the cookies have cooled, you can cover them with a sugar glaze. You can use food coloring, but if you want to treat children with the cookies, it's better not to add them. If you don’t have cookie cutters, you can use a cup or a glass, and then decorate the circles like Christmas ornaments or snowflakes. It’s best to let the glazed cookies dry overnight to prevent the glaze from smudging (for example, during transport).
