  • Unbleached flour crackers - 10.6 oz
  • Wheat Flour - 7.1 oz
  • Water - 12 fl oz
  • Salt - to taste
  • Lavender flowers - 1 teaspoon
  • Honey - 1.1 oz
  • Dry yeast - 0.4 oz

Step by Step guide

Step 1

Mix both types of flour, add lavender, and rub in the yeast until crumbly. Add salt, honey, water, and knead the dough. Shape the dough into a ball, cover it, and let it rest for 45 minutes.

Step 2

Place the dough on a surface, shape it into a ball again, and cover it, letting it rest for another 45 minutes.

Step 3

Place the dough on a surface, flatten it, and fold the corners to the center to form a square. Dust with flour.

Step 4

Line a baking sheet with a towel, transfer the bread seam-side down. Cover with a towel and let it rest for 1 to 1.5 hours.

Step 5

Preheat the oven to 482°F.

Transfer the bread onto an inverted baking sheet, score the surface with a sharp knife, making a double cross.

Step 7

Spray the oven walls with water from a spray bottle, place the loaves inside, reduce the temperature to 428°F, and bake for 10 minutes. Lower the temperature to 392°F and bake for another 20 to 30 minutes.
