- Butter - 1.8 oz
- Honey - 5.3 oz
- Wheat Flour - 14.1 oz
- Salt - a pinch
- Whole egg - 1 piece
- Chicken Egg - 1 piece
- Sugar - 6 teaspoons
- Baking Powder - 0.5 oz
- Meyer Lemon Juice - 2 spoons
- Cardamom - 2 pieces
- Nutmeg - a pinch
- Clove - 3 pieces
- Ground Black Pepper - a pinch
- Cinnamon - a pinch
Step by Step guide
Step 1
Melt the butter in a saucepan, add the honey, and stir.
Step 2
Pour three tablespoons of sugar into a hot skillet and keep it over the heat until the sugar turns dark brown. Pour the hot caramel into the hot oil and stir. Add an egg and a yolk that have been beaten with a tablespoon of sugar.
Step 3
Crush the spices — cloves, cardamom, nutmeg, black pepper, and cinnamon — in a mortar and add them to the butter with the caramel.
Step 4
Next, gradually add the flour to the butter, incorporate the baking powder, and knead a stiff dough. Knead for a long time — at least ten minutes.
Step 5
Shape the gingerbread cookies and place them in a preheated oven at 392°F for fifteen to twenty minutes.
Step 6
Make the glaze: mix the remaining sugar with two tablespoons of water and two tablespoons of lemon juice. Bring this mixture to a boil and simmer until it thickens to a syrupy consistency.
Step 7
Dip each gingerbread into the saucepan with glaze for five to ten seconds, then remove and place on a napkin to cool.
