Description
Tzimmes as a side dish for meat and other dishes is best made less sweet by reducing the amount of sugar and honey by half. You will also need to use half as much lemon juice and nuts.
Ingredients
- Carrot - 2 lbs
- Leek - 1 stalk
- Pickled Apples - 5 pieces
- Light Raisins, Seedless - to taste
- Dried Apricots - 10 pieces
- Walnuts - 2.3 oz
- Lemon - 1 piece
- Brown Sugar - 2 spoons
- Honey - 10 teaspoons
- Olive Oil - 2 spoons
- Butter - 3 spoons
- Thyme - to taste
- Black Cumin (Cumin) - to taste
- Cinnamon - to taste
- Nutmeg - to taste
- Ginger - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Heat olive oil and butter in a medium-sized heavy-bottomed pot. If the tsimmes is served with meat, the butter should be replaced with the same olive oil to adhere to kosher guidelines.
Step 3
Slice the white part of the leek (you can substitute with onion) into thin rings, place them in a pot with brown sugar, and caramelize until golden brown.
Step 4
Slice the carrot into rounds. If it's very thick, cut it into half-moons or even quarters.
Step 5
Transfer it to a pot, fill it three-quarters full with water, and simmer over medium heat for ten minutes.
Step 6
Peel the apples and remove the cores, then cut them into cubes.
Step 7
Grate the ginger and lemon zest, and cut the dried apricots into quarters.
Step 8
Transfer all of this to the carrots (leave half of the zest aside), add the raisins, and mix well.
Step 9
Add the spices and honey, season with a little salt, squeeze the juice of the lemon, and mix again. Simmer for about fifteen minutes, until the carrots soften, but make sure the apples do not turn to mush. Remove from heat, add the chopped walnuts, and stir.
Step 10
Serve as a dessert, garnished with the remaining lemon zest.
