Hoppy Chocolate Ice Cream
Ingredients
- Liquid dark chocolate - 7.1 oz
- 3.2% Milk - 8 fl oz
- 10% cream - 8 fl oz
- Sugar - 3.5 oz
- Salt - a pinch
- Vanilla extract - 1 teaspoon
- Egg white - 4 pieces
- Guinness Beer - 6 fl oz
Step by Step guide
Step 1
Break the chocolate into pieces and place them in a large bowl. Secure a sieve over the bowl.
Step 2
Combine the milk, sugar, and salt in a heavy-bottomed saucepan, stirring to mix. Place over medium heat and bring just to a simmer. Remove from heat.
Step 3
In a separate bowl, whisk the egg yolks until pale yellow and fluffy. Gradually pour the hot milk into the beaten yolks while continuously stirring. Pour the mixture back into the saucepan, return to medium heat, and cook, stirring constantly and scraping the edges and bottom of the pan. Cook the custard until it thickens, but do not allow it to boil. Once the custard reaches the consistency of liquid sour cream, remove from heat.
Step 4
Strain the custard through the sieve into the bowl with the milk chocolate. Remove the sieve and stir the custard until the chocolate is completely melted. Stir in the cream, vanilla extract, and dark beer. Mix well again.
Step 5
Cool the custard in a cold water bath. To do this, fill a large bowl halfway with very cold water and ice cubes. Place the saucepan with the custard on top. Stir the custard occasionally for about 30–40 minutes until it cools.
Step 6
Remove the ice cream mixture from the water bath, tightly cover it with a lid, and place it in the refrigerator for 4–5 hours for further cooling.
Step 7
After the time has elapsed, take the ice cream out of the refrigerator and transfer it to an ice cream maker, churning for 20–40 minutes. At the end of churning, the mixture will resemble soft-serve ice cream. Fill a container with the resulting mixture and place it in the freezer for 3–4 hours until fully set.
Step 8
If you do not have an ice cream maker, immediately transfer the ice cream mixture to a container and place it in the freezer. Take the container out and stir the contents every half hour until set.
