Ingredients

  • Bananas - 2 pieces
  • Canned Pineapple Chunks - 4.4 oz
  • Raw cane sugar - 10.9 oz
  • Self-rising flour - 7.4 oz
  • Ground Cinnamon - 2 teaspoons
  • Peach Juice - 3 tablespoons
  • Vegetable Oil - 5 fl oz
  • Butter - 2.1 oz
  • Farm fresh eggs - 2 pieces
  • Mascarpone Cheese Unagrande - 4.4 oz
  • Meyer Lemon Juice - 2 teaspoons
  • Powdered Sugar - 6.5 oz

Step by Step guide

Step 1

Preheat the oven to 356°F. Grease a square baking pan and line it with parchment paper.

Step 2

Mash the bananas and transfer them to a large bowl, add finely chopped pineapple and sugar. Then add the sifted flour and cinnamon. Mix well with a wooden spoon.

Step 3

Combine the vegetable oil, pineapple juice, and eggs, then pour into the banana mixture. Mix until smooth.

Step 4

Transfer the batter to the pan and smooth the top. Bake for 1 hour until done. Leave in the pan for 15 minutes, then transfer to a serving plate.

Step 5

For the frosting, beat the softened butter and cheese with a mixer. Gradually add the powdered sugar and lemon juice. Whip until creamy.

Step 6

Spread the frosting over the cake.
