Description
I made it for the first time, so at first, I struggled with the layers, but then it all faded away as I tasted and celebrated. Let's brew some tea and enjoy. While writing this, I wanted to make it again and devour it.
Ingredients
- Wheat Flour - 5 tablespoons
- Salt - a pinch
- Walnuts - 15 oz
- Ground Cinnamon - to taste
- Butter - 20 oz
- Apricot Jam - 4 tablespoons
- Coconut Milk - 1 cup
- Sugar - 0.7 cups
- Condensed Milk - ½ cup
- Caramel Syrup - 4 tablespoons
- Milk - 1 cup
- Whole egg - 8 pieces
- Egg white - 12 pieces
- 10% cream - 4 tablespoons
- Chopped almonds - 5 oz
- White Chocolate - 3 pieces
- Liquid dark chocolate - 5 oz
Step by Step guide
Step 1
First, we separate the egg whites from the yolks. Make sure the eggs are cold and the mixing bowl is dry. Start whipping the egg whites, adding a pinch of salt and gradually all the sugar for the layers. Whip until stiff peaks form. You can check if the egg whites are ready by turning the bowl upside down over your head. I hope no one ruined their hairstyle.
Step 2
Turn the walnuts into walnut powder using a food processor or coffee grinder. Now add the flour to the nuts.
Step 3
Combine the egg whites with the nuts and flour. Gently fold with a spatula.
Step 4
Now take parchment paper. Trace the intended size of the layer on it. Spread the batter within the traced circle and smooth it out.
Step 5
Place it in a preheated oven at 300°F (300 degrees Fahrenheit). Wait. They bake quickly, depending on the thickness of the layer. As soon as the layer turns golden, take it out. Then take a new piece of parchment, trace, lay down the batter, and place it in the oven...
Step 6
Set the finished layer aside with the parchment. Dampen any cloth in water and run it on the back of the parchment so that the layer starts to separate from it. I struggled with this until I found this tip. So, for example, I ended up with 7 layers.
Step 7
If you’re not tired yet, let’s move on to the cream: mix the milk with the coconut milk using a mixer until smooth. Pour out one-third of this mixture. To this one-third, add sugar and yolks.
Step 8
Heat the remaining cream mixture. Bring it to a boil and gradually add the mixture with yolks and sugar. Bring it to a boil again. Then let this mixture cool for about an hour.
Step 9
While the cream is cooling, mix the softened butter with the condensed milk and cherry syrup (vodka, liqueur... whatever you have). Now combine the two parts.
Step 10
Soak each layer with the cream. Spread jam on the top layer.
Step 11
To decorate the top, melt the white chocolate in the cream and carefully pour it on top. Then, also carefully, drizzle the dark chocolate over the white chocolate in circles and run a toothpick through the dark chocolate downwards.
Step 12
Decorate the sides of the cake with almond flakes.
