Description
A beautiful recipe that ideally uses a mix of wild mushrooms for a more aromatic result. Gruyere cheese will also add a delightful flavor to the pie.
Ingredients
- Milk - 3 fl oz
- Butter - 4.6 oz
- Water - 3 fl oz
- Wheat Flour - 4.2 oz
- Farm fresh eggs - 5 pieces
- Gruyère cheese - 3.5 oz
- Ground Black Pepper - to taste
- Salt - to taste
- Onion - 1 piece
- 10% cream - 3 fl oz
- Mustard Greens - 1 tablespoon
- Herbs - to taste
- Fresh Mushrooms - 15.9 oz
Step by Step guide
Step 1
In a saucepan, mix the milk and water, add the butter (110 g) cut into pieces, and start to reduce the mixture. Season with salt and pepper. Bring to a boil. Add the flour and stir with a wooden spatula until a homogeneous mass is obtained.
Step 2
Preheat the oven to 392°F, line a baking tray (23 cm) with parchment paper.
Step 3
Let the dough cool, transfer it to a food processor, gradually adding one egg at a time. Set one egg aside for brushing the dough. Add the grated cheese, pepper, and optionally rosemary or nutmeg to the dough. For convenience, pour the dough into a bag with the tip cut off and squeeze the dough onto the baking tray in a spiral. The dough should fit tightly without gaps. Brush the surface with the beaten egg. Bake for 40 minutes until golden brown.
Step 4
For the filling, chop the onion into rings (if you don't like a strong onion flavor, chop it as finely as possible). Sauté in butter. Cut the mushrooms into small pieces and add them to the onion. The mushrooms should become soft. Season with salt and pepper if desired. Stirring constantly, add the cream and mustard. Mix for a couple of minutes and remove from heat.
Step 5
Remove the baked crust and place the filling on top. Sprinkle with finely chopped herbs.
