- Milk - 10 fl oz
- 10% cream - 3 fl oz
- Dry Malted Milk Powder - 0.7 oz
- Sugar - 2.1 oz
- Whole egg - 2 pieces
- Grapefruits - to taste
- Dextrose - 0.7 oz
Step by Step guide
Step 1
Mix the sugar, dextrose, and dry milk. Take the yolks of two eggs — this should be about forty grams.
Step 2
Heat the milk to 167°F, add the egg yolks, and pour in the cream, mixing everything thoroughly.
Step 3
Add the dry mixture and blend everything with an immersion blender until there are no lumps. Refrigerate for about twenty to thirty minutes.
Step 4
Pour the mixture into an ice cream maker and churn until ready. If you don't have a special machine at home, you can try doing it manually: pour the mixture into a large bowl, place it in the freezer, and stir every half hour. This process will take about two to three hours.
Step 5
Scoop the ice cream into dessert bowls, garnish with fruits, and serve.
