Ice Cream with Baileys, Brandy, and Milk Chocolate Crumble
Ingredients
- 3.2% Milk - 7 fl oz
- 10% cream - 7 fl oz
- Sugar - 3.2 oz
- Salt - a pinch
- Corn Starch - 4 teaspoons
- Semi-soft cream cheese - 1.8 oz
- Baileys Liqueur - 3 tablespoons
- Brandy - 2 teaspoons
- Liquid dark chocolate - 2.6 oz
Step by Step guide
Step 1
Dissolve the cornstarch in 50 ml of milk and set aside.
Step 2
In a small saucepan, combine the remaining milk, cream, salt, and sugar. Stir and place over medium heat, bringing it almost to a boil. Pour in the cornstarch mixture and cook, stirring constantly, until thickened. Remove from heat, add the cream cheese, and mix until smooth. Add the Baileys and brandy, and mix again until smooth. Cool to room temperature, then refrigerate overnight.
Step 3
Transfer the mixture to an ice cream maker and freeze according to the manufacturer's instructions. In the last couple of minutes of freezing, drizzle in the melted milk chocolate, waiting for the chocolate 'streams' to set before transferring the ice cream to a container. Place in the freezer for at least 4 hours until firm.
Step 4
If you don't have an ice cream maker, immediately transfer the mixture to a container, place it in the freezer, and stir the contents every 20–30 minutes until fully frozen.
Step 5
Before serving, drizzle the ice cream with melted milk chocolate, allowing the chocolate to set into a 'magic shell,' and optionally drizzle with an additional portion of Baileys.
