Icy parfait with almonds and mandarins

Ingredients

  • Chopped almonds - 1.8 oz
  • Butter - 1 tablespoon
  • Cream - 2 fl oz
  • Egg white - 2 pieces
  • Orange bitters - 1 tablespoon
  • Mandarin Puree - 1 piece
  • Powdered Sugar - 1.1 oz
  • White Chocolate - 1.8 oz

Step by Step guide

Step 1

Chop the nuts and toast until golden. Grease the baking molds with butter and line with parchment paper, then sprinkle half of the nuts.

Step 2

Lightly whip the cream. Whip the egg whites with powdered sugar. Add the remaining nuts, liqueur, zest, and fold in the cream. Divide into molds and place in the freezer.

Step 3

Melt the chocolate in a double boiler. Cut 2 strips of parchment (5 cm by 25.5 cm). Pour the chocolate onto the strips. Quickly invert the molds with the parfait onto the parchment sheet. Wrap the parfait with the chocolate strips inside and freeze.

Step 4

Before serving, remove the parchment, sprinkle with nuts, chocolate, and powdered sugar. Serve with mandarins.
