Indian Paratha with Greens and Cheese
Ingredients
- Cilantro - 1 bunch
- Wheat Flour - 17.6 oz
- Ghee - 4 tablespoons
- Adyghe cheese - 7.1 oz
- Ocean salt - 2 teaspoons
- Ground Black Pepper - 0.4 teaspoons
- Asafetida - 0.4 teaspoons
- Paneer Cheese - 5.3 oz
Step by Step guide
Step 1
Melt 2 tablespoons of ghee in a double boiler. Mix it in a deep bowl with the flour, thoroughly rubbing it with your hands until the flour becomes crumbly.
Step 2
Dissolve the salt in a glass of warm water and gradually pour the water into the flour, kneading the dough. The dough should be soft and not stick to your hands. Cover the dough with a towel, place it in a warm spot, and let it rest for about half an hour.
Step 3
While the dough is resting, finely chop the greens, grate the paneer, and mix the grated cheese, greens, and spices.
Step 4
Divide the rested dough into about ten parts. Roll each part into a ball and flatten it into a thin round on a surface dusted with flour.
Step 5
Place the filling of paneer, greens, and spices in the center of the round. Pinch the edges of the round and roll it out again into a not-too-thin round. Repeat with the remaining rounds.
Step 6
Heat a heavy-bottomed skillet over high heat and melt some ghee in it (do not use too much ghee). Place the rounds in the skillet one by one and fry on both sides until a golden crust forms.
