Irish Raisin Cake

Ingredients

  • Wheat Flour - 3 cups
  • Water - 2¼ cups
  • Sugar - 1 cup
  • Raisins - 20.1 oz
  • Egg white - 1 piece
  • Butter - 3.9 oz
  • Irish Whiskey - ½ cup
  • Salt - 1 teaspoon
  • Activated Baking Soda - 2 teaspoons
  • Ground coriander - 2 teaspoons
  • Ground Cinnamon - 1 teaspoon
  • Ground clove - ½ teaspoon
  • Ground Nutmeg - 1½ teaspoons
  • Ground clove - ½ teaspoon
  • Grated Ginger Root - 2 teaspoons

Step by Step guide

Step 1

The day before baking, combine the spices, water, raisins, butter, and sugar in a small saucepan. Bring to a boil, stirring, then reduce the heat and simmer for 20 minutes. Remove from heat and add the whiskey. Once the mixture has completely cooled, cover and refrigerate overnight.

Step 2

The next day, place the saucepan with the mixture in a bowl of hot water to melt the butter on the surface.

Step 3

Preheat the oven to 347°F (350 degrees Fahrenheit), and place a baking tray with water on the bottom rack. Grease a baking pan (about 9 inches) with butter and dust with flour.

Step 4

Sift the flour, mix it with the baking soda and salt, then combine with the prepared mixture and add the beaten egg. Transfer the batter to the pan and place it in the oven. Bake for about 1 hour 30 minutes, until browned, and check for doneness with a wooden stick; it should come out dry from the center. If the cake browns too quickly, cover it with foil.
