Description

- Sugar - 3.5 oz
- Ground Almonds - 5.3 oz
- Salt - a pinch
- Egg white - 1 piece
- Pistachios - 5.3 oz
- Almond - to taste
Step by Step guide
Step 1
In a deep bowl, mix the almond flour and sugar.
Step 2
In another bowl, beat the egg white with a pinch of salt, but not to peaks, just until slightly frothy.
Step 3
Fold the beaten egg white into the almond mixture, add a couple of drops of almond extract, knead the dough with your hands, and form a ball. Pinch off small pieces of dough at a time, roll each piece in pine nuts, and shape into small balls, ensuring the nuts are inside the cookie ball. Slightly flatten the surface of each cookie before baking.
Step 4
Bake the cookies in a preheated oven at 320°F (320 degrees Fahrenheit) for 25–30 minutes. Let cool and enjoy.
