Description
Italian chocolate dessert or dome cake (Zuccotto)
Ingredients
- Chicken Egg - 2 pieces
- Butter - 3.5 oz
- Sugar - 4.2 oz
- Cocoa Powder - 0.7 oz
- Wheat Flour - 3.5 oz
- Baking Powder - 2 spoons
- 10% cream - 10 fl oz
- Almond - 1.8 oz
- Cherry - 8.8 oz
- Powdered Sugar - 3.5 oz
- Liquid dark chocolate - 1.8 oz
Step by Step guide
Step 1
Mix the dry ingredients: flour, cocoa powder, and baking powder.
Step 2
Add the melted butter, mix well, then add the sugar and mix again.
Step 3
Beat the eggs in a bowl, add them to the dough, gently mix, and spread the mixture onto a baking sheet lined with parchment paper (approximately 12x14 inches).
Step 4
Place the dough in a preheated oven at 356°F for 15–20 minutes.
Step 5
Let the baked layer cool.
Step 6
Take a round bowl, not too large, with a capacity of about 1.2 liters, and using it as a stencil, cut out a circle from the cake and set it aside.
Step 7
Line the bowl with plastic wrap.
Step 8
From the remaining cake, cut out triangles; I ended up with not just triangles but also strips and rectangles, so it's perfectly fine to arrange them in a bowl following its shape.
Step 9
Chop the nuts if using whole ones; I bought pre-chopped ones, and finely chop the chocolate.
Step 10
In a separate bowl, whip the cream with powdered sugar. Here, I got a little clever, as I didn't have much powdered sugar, so I simply ground regular sugar in a coffee grinder, and it turned out the same.
Step 11
And instead of the full amount of cream, I used about 200 ml and then added about 100–150 g of plain cream cheese.
Step 12
Add the nuts to the mixture and stir, then add the chocolate, mix again, and incorporate the cherries.
Step 13
I had frozen cherries. I thawed them and drained the juice.
Step 14
Spread the mixture onto the cake layer and cover it with the cut-out circle.
Step 15
Refrigerate for 6–8 hours or overnight.
Step 16
Before serving, invert onto a plate, remove from the bowl, and garnish. I dusted it with powdered sugar and decorated it with fresh mint leaves and cocktail cherries.
