Italian Christmas Pie with Pine Nuts

Ingredients

  • Olive Oil - to taste
  • Amaretti - 1.8 oz
  • Hazelnut - 10.6 oz
  • Liquid dark chocolate - 8.8 oz
  • Muscovado Sugar - 7.1 oz
  • Brandy - 4 tablespoons
  • Oranges - 1 piece
  • Pistachios - 3.5 oz
  • Self-rising flour - 1.8 oz
  • Large eggs - 6 pieces

Step by Step guide

Step 1

Preheat the oven to 356°F. Grease a round springform pan (24 cm) with olive oil.

Step 2

Crush the amaretti cookies and sprinkle them evenly on the bottom and sides of the pan. Shake off any excess crumbs into a large bowl.

Step 3

In a food processor, combine the hazelnuts and broken chocolate. Grind until crumbly, being careful not to turn it into a paste.

Step 4

Transfer to the bowl with the crumbs and add sugar, brandy, grated orange zest, freshly squeezed orange juice, and pine nuts. Add the egg yolks and mix well. Add the flour and mix again.

Step 5

Whip the egg whites with a pinch of salt until stiff peaks form and gently fold them into the batter. Pour into the prepared pan and bake for about 1 hour until done, checking with a toothpick.

Step 6

Carefully remove from the pan and let cool. Serve warm or at room temperature.
