Description
It's best to use a flexible baking pan (for example, silicone). You can add grape seed oil to olive oil. This will give the pie a pleasant aroma and eliminate a slight bitterness if you are using extra virgin olive oil. Thus, if the recipe calls for 4 tablespoons of olive oil, you can use 2 tablespoons of olive oil and 2 tablespoons of grape seed oil. This pie can also be found under the name 'Schiacciata with Grapes'.

- Unleavened dough - 17.6 oz
- Grapefruits - 24.7 oz
- Sugar - 4.2 oz
- Olive Oil - 10 tablespoons
Step by Step guide
Step 1
Wash the grapes and leave them to dry.
Step 2
Knead 250 grams of yeast dough with 4 tablespoons of olive oil and 50 grams of sugar.
Step 3
On a floured surface, roll out the dough to a thickness of about 1 cm, trying to shape it to fit your baking pan.
Step 4
Grease the baking pan with a small amount of butter and lay the rolled-out dough in it.
Step 5
Cut each grape into 4 pieces and remove the seeds if you are using seeded grapes. If you are using other varieties of grapes, it's also a good idea to cut them.
Step 6
Sprinkle the filling with 4 teaspoons of sugar and drizzle with 2 tablespoons of olive oil.
Step 7
Knead the remaining dough with 4 tablespoons of olive oil and 50 grams of sugar, roll it out, and place it in the pan over the bottom layer and filling.
Step 8
Crack 1 egg into a glass and beat it with a fork. Dipping your fingers in the egg, seal the edges of the pie. Brush the entire top layer with egg. You can also insert a few grapes into the top layer for decoration (if you are using seeded grapes, be sure to cut the grapes in half and remove the seeds).

Bake the pie at 356°F for 45–50 minutes.
