Description

- Hazelnut - 12 oz
- Sugar - 1¼ glasses
- Salt - ½ spoons
- Egg white - 4 pieces
- Vanilla extract - 1 tablespoon

Preheat the oven to 320°F. Line 2 baking sheets with parchment paper.
Step 2
In a food processor, grind the nuts with the sugar until they reach a flour-like consistency. Transfer to a large bowl.
Step 3
In another bowl, use a mixer to beat the egg whites with salt until stiff peaks form. Gently fold them into the nut mixture. Then, add the vanilla.
Step 4
Place the cookies on the baking sheets in small mounds, leaving a 5 cm space between each.

Bake for 25–30 minutes until golden brown. Let cool for 5 minutes, then carefully transfer to a wire rack.
