Description
The literal translation of this dessert's name from Italian means 'half-cold.' Although semifreddo is completely frozen, it cannot be called ice cream in the conventional sense: being a close relative of gelato, it differs in the technique of mixing ingredients and texture. Semifreddo is made using eggs and whipped heavy cream, which makes the dessert resemble a blend of gelato and meringue. This recipe is great because it can be modified in any way, adding various toppings from chocolate and candied fruit to chili pepper and ginger.
Ingredients
- Chicken Egg - 3 pieces
- Whole egg - 2 pieces
- Vanilla extract - 1 tablespoon
- Sugar - 10 oz
- 33% Cream - 15 fl oz
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Place the eggs and yolks in a large bowl.
Step 3
Add sugar to them.
Step 4
Place the bowl over a double boiler.
Step 5
Whisk for 8–10 minutes until the mixture thickens and takes on a whitish hue. Remove from heat and let it cool.

Add vanilla extract. Stir well.
Step 7
Using a mixer, whip the cream until stiff peaks form.
Step 8
Transfer them to the egg mixture and gently fold in from the bottom up.
Step 9
Pour the mixture into a rectangular baking dish.
Step 10
Place in the freezer for 6 hours. Serve.
