Description

Sweet lovers can use milk chocolate instead of dark chocolate.

Ingredients

  • Chicken Egg - 1 piece
  • Baking Powder - 2.5 oz
  • Butter - 1.1 oz
  • Powdered Sugar - 1.8 oz
  • 70% Dark Chocolate - 4.6 oz
  • Vegetable Oil - 2 teaspoons
  • Cinnamon - to taste
  • Ginger - to taste
  • Oranges - 1 piece
  • Sugar - ½ cup
  • Water - 1 cup
  • Potato protein - ½ tablespoon

Step by Step guide

Step 1

For the orange jam (marmalade), cut the orange into quarters. Peel only half of the orange, leaving the other half unpeeled. Remove the seeds and the white core. Cut each quarter in half again.

Step 2

Place the semi-peeled orange in a food processor or blender. Blend until it reaches a slightly chunky consistency, with pieces of peel visible. Be careful not to overdo it, or it will turn into puree.

Step 3

In a saucepan with water, add the sugar. Heat it up.

Step 4

When the sugar starts to melt, add the blanched orange. Bring to a boil.

Step 5

Reduce the heat and simmer for about 40 minutes, stirring, until it thickens.

Step 6

To achieve a jelly-like consistency, add half a tablespoon of starch. Also, for aroma, add a pinch of ground ginger and cinnamon.

Step 7

While still hot, blend the jam in a blender. Allow it to cool and store it in the refrigerator. After cooling, the jam will thicken nicely and acquire a jelly-like consistency.

Step 8

For the biscuit, preheat the oven to 392°F.

Step 9

In separate bowls, beat the yolks and whites with powdered sugar (25 grams each). Towards the end of beating, gradually add the flour mixed with baking powder (35 grams each). Combine the yolk and white mixtures. This sequence of making the biscuit makes it airier and helps it rise better.

Step 10

Grease 7 tartlet (or muffin) molds with butter and place 1 tablespoon of the batter in each. Bake for about 10 minutes until golden, then remove and transfer to a wire rack.

Step 11

When the bases cool, cut them in half horizontally to create thin medallions.

Step 12

Place a spoonful of jam in the center of each biscuit circle and spread it a little.

Step 13

Melt the chocolate with butter, vegetable oil (if using), and a spoonful of water in a water bath. Cool it until the chocolate starts to thicken slightly. Drizzle the chocolate over the biscuits with jam and let it set completely.
