Jam Pie
Ingredients
- Wheat Flour - 10.6 oz
- Butter - 3.5 oz
- Sugar - 4.2 oz
- Chicken Egg - 3 pieces
- Baking Powder - 0.4 oz
- Water - 3 spoons
- Cottage cheese - 12.3 oz
- Semolina - 1 tablespoon
- Vanilla salt - 1 tablespoon
- Black Currant Jam - 8.8 oz
Step by Step guide
Step 1
Prepare all the ingredients. Take the butter out of the fridge in advance so that it has time to soften.
Step 2
Sift the flour into a large bowl or mixing bowl. Add the diced butter and knead the dough.
Step 3
When the dough crumbles, add 70 grams of sugar, baking powder, and 1 egg.
Step 4
Gradually add water, one tablespoon at a time, while kneading the dough. It should start to come together into a firm ball.
Step 5
Separate about one third from the prepared dough, roll both portions into balls, wrap them in plastic wrap, and place them in the freezer for 1 hour.
Step 6
Prepare the filling. In a bowl, combine 2 eggs, cottage cheese, the remaining sugar, and vanilla sugar. Blend until smooth and free of lumps.
Step 7
Add the semolina and mix everything thoroughly once again.
Step 8
Remove most of the dough from the freezer, unwrap it from the plastic wrap, grate it coarsely into a baking dish, and smooth out the layer of the resulting shavings.
Step 9
Spread the cottage cheese filling on top, smooth it out, and place the pie in a preheated oven at 356°F for 15 minutes, until the cheese sets.
Step 10
Spread the jam over the cottage cheese and use a spoon to evenly distribute it across the entire surface.
Step 11
Evenly grate the remaining dough on top.
Step 12
Bake for an additional 20 minutes, until the top of the pastry is golden brown. Allow the pie to cool completely before serving, otherwise it may crack and the filling could spill out.
