Crush the sugar in a mortar. Add it along with the jam—red currant, apricot, or raspberry—to a saucepan on the stove. Add 450 ml of water and cook over low heat, stirring for 10 minutes.
Step 2
In a cup, mix the starch with 2 tablespoons of water. Once the mixture is smooth, add it to the saucepan with the jam. Cook, stirring, for another 5 minutes.
Step 3
Add the lemon juice, strain, and serve. This sauce pairs wonderfully with delicate fruit desserts and ice cream.
