Jamaican Cornmeal Porridge
Ingredients
- Milk - 4 cups
- Coarse Cornmeal - 1 cup
- Salt - to taste
- Condensed Milk - 1.8 oz
- Coconut Milk - 1 fl oz
- Ground Cinnamon - a pinch
- Heavy cream - 1 cup
- Vanilla extract - 2 teaspoons
- Ground Nutmeg - a pinch
- Candied fruits - ½ cup
Step by Step guide
Step 1
Combine milk, 2 cups of water, and cornmeal in a pot, place over heat, and bring to a boil. Cook, stirring frequently, for about 4 hours.
Step 2
Then add salt, coconut milk, condensed milk, cinnamon, and cook for another hour until the porridge thickens.
Step 3
Remove from heat, stir in the cream, add vanilla, nutmeg, and sprinkle each serving with candied fruits.
