It's important that the jelly base is truly vibrant and expressive — then you don’t even need to overdo the sugar. Cherries always make a bold statement; their slightly wine-like, summery flavor is unmistakable. Strawberries would also work beautifully in this role. Moreover, in winter, you can confidently prepare jelly from frozen berries: the shape that berries inevitably lose from the cold doesn’t matter here, and the intensity of flavor remains unchanged. Once you master the basic jelly recipe, you can endlessly explore the idea by adding spices, a bit of red wine, or transforming the jelly from a standalone dish into a layer for a cake if you've decided to temporarily set aside your diet for an important family celebration.
Ingredients
- Cherry - 7.1 oz
- Water - 15 fl oz
- Sugar - 2.5 oz
- Gelatin - 0.9 oz
Step by Step guide
Step 1
In a pot, bring water to a boil, add sugar and 150 g of cherries. Cook for 10 minutes.
Step 2
Strain the cherry compote; the cooked berries in the jelly are not needed.
Step 3
Add fresh cherries to the compote and cool it down to 158°F.
Step 4
Add gelatin to the compote and whisk it thoroughly. If using gelatin sheets, soak them in cold water for 5 minutes beforehand.
Step 5
Place a few fresh berries into individual dessert cups or glasses.
Step 6
Pour the future jelly into them. Allow it to cool completely, then refrigerate until fully set.
