Description
Homemade cookies, the dough for which is usually made with matsoni, resulting in a light, flaky texture with a creamy taste. However, you can substitute buttermilk or just use water. The shape of the baked goods can be anything: Kada is often prepared as a long roll, sliced into rounds, or shaped into spirals, pillows, or crescents. The filling is always the same: flour sautéed with butter and sugar. It may seem simple, but it’s tastier than any cleverly whipped pastry cream.

- Wheat Flour - 8.8 oz
- Butter - 3.5 oz
- Chicken Egg - 1 piece
- Milk - 1 fl oz
- Ghee - 3.5 oz
- Sugar - 7.1 oz
- Salt - 0.1 oz
Step by Step guide
Step 1
For the dough, measure out 200 grams of flour, sift it into a mound on a board, create a well in the center, and pour in half a cup of salted water. Quickly knead the dough and shape it into a ball.
Step 2
Roll the dough ball into a sheet about 2–3 cm thick, generously spread its surface with butter (100 g), fold the dough into quarters, and let it rest in the refrigerator for about ten minutes. Then roll it out again, fold it into quarters, and return it to the refrigerator for another ten minutes. Repeat the same process of folding and rolling the dough two to three times. Place the dough in a bowl and let it rest in the refrigerator for half an hour.
Step 3
While the dough is resting, prepare the filling: add 3 tablespoons of flour to a skillet and sauté it, stirring, until it turns a light pink color.
Step 4
Add the butter to the sautéed flour and sauté lightly while stirring constantly until the mixture becomes homogeneous. Remove from heat, immediately add the granulated sugar to the flour, mix thoroughly, and let cool.
Step 5
Divide the dough in half and roll out each portion into a sheet about 2–3 mm thick. Evenly spread the sugar filling over each sheet, then roll the sheets into long, fairly tight logs.
Step 6
Roll each pastry into a spiral. Beat the egg with the milk and brush the mixture over the dough.
Step 7
Place the "snails" on a floured baking sheet and bake in a preheated oven at 320°F for 45–50 minutes, until the crust turns golden brown. Allow to cool and slice into 4 cm pieces.
