Kaletki (Karelian Pastries) with Filling
Ingredients
- Coarsely Ground Rye Flour - 8.5 oz
- Sour Cream - 3.5 oz
- Milk - 5 fl oz
- Salt - to taste
Step by Step guide
Step 1
Mix the sour cream and milk in a glass.
Step 2
Sift the rye flour into a bowl, add a little salt, and gradually add the milk and sour cream mixture, stirring it with the flour.
Step 3
Our goal is to add as much sour cream and milk as the flour will absorb, resulting in elastic, pliable dough.
Step 4
Knead the dough, wrap it in plastic wrap, and let it 'rest' for about 20-30 minutes.
Step 5
Form a sausage shape from the dough and, cutting off pieces the size of a walnut, roll them out on a floured surface into round discs 1-1.5 mm thick (this becomes easy and effortless with some practice; initially, you can use a small plate to achieve the correct shape).
Step 6
Place 2 tablespoons of filling in the center of each disc and, folding the edges towards the center from both sides, pinch them together with a spacing of about 1 cm.
Step 7
Transfer the kaletki to a greased baking sheet and bake for 20 minutes at 392°F.
Step 8
Kaletki are enjoyed dipped in hot milk or spread with room temperature butter mixed with chopped hard-boiled egg — it’s very delicious.
