Kefalonian Meat Pie

Ingredients

  • Wheat Flour - 2 lbs
  • Chicken Egg - 2 pieces
  • Lamb - 17.6 oz
  • Pork Blood - 17.6 oz
  • Beef - 17.6 oz
  • Olive Oil - 3 fl oz
  • Onion - 1 head
  • Bay leaf - 3 pieces
  • Green peppercorns - 3 pieces
  • Ground clove - 3 pieces
  • Salt - 1 teaspoon
  • Ground Black Pepper - 1 teaspoon
  • Cinnamon - 1 teaspoon
  • Passata Tomato Sauce - 3.5 oz
  • Water - 3 fl oz
  • Rice - 7.1 oz

Step by Step guide

Step 1

Prepare the dough. For this, mix the flour, 1 teaspoon of salt, 100 ml of olive oil, 100 ml of warm water, and 2 lightly beaten eggs to knead the dough. Divide it into 4 parts, shape them into balls, and place them in the refrigerator for 30 minutes. Roll out each portion of dough into a thin flatbread and dry on a towel.

Step 2

Cut all the meat into small cubes and sauté in oil with the onion in a large deep skillet. Add the spices, tomato paste, and water. Wrap the cloves, black peppercorns, and bay leaf in cheesecloth for easy removal later. Simmer for 40 minutes. Then add the rice and simmer everything for another 10 minutes, stirring.

Step 3

Preheat the oven to 347°F. Grease a round baking dish with oil, place one flatbread on the bottom, grease it with oil, then add a third of the filling on top. Then another flatbread, oil, another third of the filling, and again a flatbread, oil, and the last part of the filling. Top with the final flatbread. Seal the edges of the flatbreads, brush the last flatbread with olive oil, and bake in the oven for 45 minutes.
