Description

Before mixing the blueberry puree and kefir, you can optionally strain the puree through a sieve to achieve a smoother and more refined sherbet. Alternatively, you can skip this step and still get a delicious sherbet with a more pronounced blueberry character. Use kefir of any fat content that you prefer; however, using kefir with 3.2% fat will enhance the texture of the sherbet, making it richer, similar to traditional ice cream. Feel free to play with the proportions of the sherbet when incorporating the kefir into the blueberry puree: use a whisk, mix, and observe how the color of the ice cream changes. Stop at a color you find appealing and continue preparing.

  • Fresh Berries - 13.2 oz
  • Sugar - 14.1 oz
  • Kefir - 16 fl oz

Step by Step guide

Step 1

Blend the blueberries with sugar in a blender bowl. Pour into a deep bowl and mix in the cold kefir. Cover the bowl with a plate and refrigerate for a couple of hours.

Step 2

Afterward, pour the blueberry mixture into an ice cream container and place it in the freezer overnight.

Step 3

Then transfer the container with the sherbet to the refrigerator for 5 minutes. Remove the sherbet, break up the frozen mass with a spoon, and blend in parts until you achieve a thick and smooth consistency. What you get is called soft serve ice cream. However, it is still too early to serve it.

Step 4

Again, fill the container with the blended ice cream, cover with a lid, and return it to the freezer for at least two hours before serving.
