- Glutinous Rice Flour - 1 cup
- Chokecherry Flour - 1 cup
- Salt - a pinch
- 1% Kefir - 1 qt
- Sugar Substitute - to taste

Blend kefir, egg, salt, and sweetener together.

Whisk while gradually adding flour. You need to do this by eye and according to your taste. Personally, I don't skimp on the flour; the batter should have a sour cream consistency.
Step 3
Cook the pancakes. Don't be alarmed if they develop bubbles; this is due to the kefir. However, the rice flour makes the batter very stretchy and holds its shape. They cook easily and quickly. Be careful not to overcook them: the batter is brown and may misleadingly seem burnt. Don't fall for the temptation; they are very tender inside.
