Description

Use a round baking dish with low sides, 22–24 cm in diameter. The pie should be jelly-like before removing it from the oven, and it will thicken as it cools.

Ingredients

  • Wheat Flour - 10.6 oz
  • Butter - 5.3 oz
  • Lime - 2 pieces
  • Egg white - 2 pieces
  • Sweetened Condensed Milk with Coffee - 14.1 oz
  • Salt - a pinch
  • Water - 5 tablespoons

Step by Step guide

Step 1

To prepare the dough: chop the cold butter and sift the flour, sprinkling it with a pinch of salt. Cut the dough until it resembles crumbs.

Step 2

Make a 'well' in the dough, add 5 tablespoons of ice water to the center, and quickly knead the dough.

Step 3

Roll the dough into a circle and place it in the baking dish. It needs to be pricked with a fork and baked with weights (I usually use beans) for 15 minutes, then dried without weights for another 5–10 minutes.

Step 4

For the filling: mix the juice of two limes with two eggs, add the condensed milk, and stir. It will form a jelly-like mixture.

Step 5

Pour it onto the hot crust and bake for 20 minutes at 320°F. Cool, dust with powdered sugar, or decorate.
