Today we made it, the first two were made according to the recipe, fried in a dry skillet and then brushed with butter... something was missing, so we added garlic and some herbs to the cheese and then fried it with a little oil, and after the adjustments, everyone liked the flatbreads! I make something similar.. I read a recipe for Turkish flatbreads somewhere — 250 ml of kefir, 1 egg, 1 teaspoon of salt, 0.5 teaspoons of baking soda, 2 cups of flour; any filling. I even make them plain.. but I add herbs to the dough. But when rolling out, be sure to brush the flatbread with sunflower oil... Fry in a dry skillet, previously pricking the flatbreads. The whole family loves it! Oh, sorry, I forgot. Let the dough sit in the cold for 20 minutes. Roll the flatbreads as thin as possible if they are plain. In any case.. preferably thinner. Enjoy your meal!
Ingredients
- Wheat Flour - 3 cups
- Kefir - 1 cup
- Chocolate eggs - 2 pieces
- Salt - 1 teaspoon
- Sugar - 1 teaspoon
- Vegetable Oil - 1 tablespoon
- Cheese Spread - 14.1 oz
- Activated Baking Soda - ½ teaspoon
- Butter - 1.8 oz
Step by Step guide
Step 1
In a bowl, add one egg to the kefir, along with sugar, salt, and vegetable oil, and mix well. Sift 2 cups of flour (reserve one cup for dusting), add baking soda, mix, and combine with the kefir mixture. Knead a soft dough, gradually adding flour until it holds its shape; the dough will be slightly sticky. The key is not to overdo it with the flour, otherwise, the khachapuri will turn out tough. Cover the dough with a towel and let it rest.
Step 2
Grate the cheese on a coarse grater, add one egg, and mix. The filling is ready.
Step 3
Form a sausage from the dough and cut it into 9 pieces. From each piece of dough, form a flatbread. Place the cheese filling in the center. Then, pulling the edges of the flatbread together, gather them in the center and pinch them closed. Flip the resulting pouch over and roll it out a bit, then flip it again and roll it out, but not too much.
Step 4
Bake the khachapuri in a hot skillet on both sides without oil until golden brown. For better baking, you can cover the skillet with a lid. Immediately brush the finished khachapuri generously with butter.
