Ingredients
- Wheat Flour - 24.7 oz
- Kefir - 17 fl oz
- Sugar - 1 tablespoon
- Salt - ½ spoons
- Vegetable Oil - 4 spoons
- Cheese Spread - 24.7 oz
- Butter - 3.5 oz
Step by Step guide
Step 1
Combine kefir, sugar, salt, flour, and vegetable oil to knead a soft dough, similar to that used for pies. Form the dough into a small flatbread, sprinkle it with baking soda, fold it, and repeat this process 3 more times. Dust the dough with flour, cover it with plastic wrap, and place it in a warm spot for 1 to 1.5 hours.
Step 2
Grate the cheese (it's best to use Georgian sulguni cheese) on a coarse grater.
Step 3
Divide the prepared dough into 4–5 pieces and roll each into a flat round. Place cheese and a few pieces of butter in the center. Gather the dough over the filling and pinch to seal. Place the resulting "pouch" seam side down on the work surface and gently roll it out to the size of the skillet.
Step 4
Transfer the khachapuri to a dry skillet (preferably cast iron) with the seam side down, and bake it covered in a well-preheated oven until the bottom of the bread is golden brown. Then, flip it over and, without covering, bake the khachapuri until fully cooked.
Step 5
Brush the finished khachapuri with butter.
