Khachapuri with Suluguni Cheese on Kefir
Ingredients
- Kefir - 8 fl oz
- Wheat Flour - 17.6 oz
- Salt - a pinch
- Baking Powder - a pinch
- Vegetable Oil - 2 tablespoons
- Chicken Egg - 1 piece
- Suluguni Cheese - 10.6 oz
Step by Step guide
Step 1
Dough: flour (half) + kefir + salt + baking powder. Mix with a spoon, then knead with hands, pouring oil on your hands to prevent the dough from sticking and adding flour. You should end up with 3 balls about 10 cm in diameter. Place in the refrigerator for 1 hour.
Step 2
Filling: grate the cheese on a coarse grater, add the egg (1 egg is enough for a double portion as well), mash, and form into 3 balls.
Step 3
Take a ball of dough, slightly flatten it, place a ball of cheese on it, and press it into the dough. Pinch the edges of the dough over the cheese ball. Flip the resulting ball and roll it out into a flatbread about 30 cm in diameter.
Step 4
Place on a baking sheet lightly dusted with flour, seam side down, and make a small cut in the center of the flatbread to the filling.
Step 5
Bake in the oven at 392°F for about 10 minutes.
Step 6
Transfer to a plate and brush the top with butter.
