  • Dry yeast - 0.3 oz
  • Milk - 5 fl oz
  • Wheat Flour - 14.8 oz
  • Chicken Egg - 2 pieces
  • Sugar - 3.2 oz
  • Cardamom - 0.1 oz
  • Butter - 6 oz
  • Oranges - 1 piece
  • Lemon - 1 piece
  • Dried cranberries with sugar - 8.8 oz
  • Rum - 1 fl oz
  • Chopped almonds - 2.8 oz
  • Cream - 1 fl oz
  • Powdered Sugar - to taste

Prepare all the ingredients.

In a large bowl, mix warm milk, yeast, 150 grams of flour, and 20 grams of sugar. Cover and let it rest in a warm place for one hour.

Rinse the cranberries with hot water. Zest the lemon and orange, then squeeze their juice. Mix the cranberries with the juice and zest.

Beat the eggs with sugar until fluffy.

Add the starter mixture and cardamom to the egg mixture, and stir well.

Add 250 grams of sifted flour in several stages and knead until you have a smooth, elastic dough. If the dough is too wet, incorporate an additional 50 grams of flour. Knead for about 10 minutes.

When the dough starts to pull away from the sides of the bowl, gradually incorporate 70 g of softened butter.

Cover the prepared dough and let it rest in a warm place for 1.5 hours.

Divide the rested dough into two parts for convenience, and roll each part out into a thin sheet.

Brush the layers with the remaining softened butter over the entire surface. Sprinkle with cranberries and zest (drain the juice) and almond flakes.

Roll the layers into logs, then cut each one in half lengthwise, leaving one end uncut.

Roll the cut rolls into spirals and place them into the kulich molds. The dough should barely reach the edges of the molds. Leave the kulich to rise for 40–60 minutes before baking.

Brush the kulich with cream and place them in an oven preheated to 356°F for 40–50 minutes. If the tops of the kulich start to burn, cover them with foil.

Allow the finished kulich to cool on a wire rack. Serve dusted with powdered sugar.
